No-Bake Strawberry Cheesecake

This no-bake strawberry cheesecake is super fast and easy to prepare. Part of the cheesecake batter is made in a blender with cold ingredients that are taken straight out of the fridge. It takes me only one minute to blend everything into a smooth batter. Then gelatin mixture is stirred in, followed by the whipping cream that is whipped to soft peaks. And that’s it! The batter is ready to be poured into the prepared cake pan (or tall glasses for individual desserts) and be refrigerated. Unmold, decorate with fresh fruits and you are all set! Isn’t that cool?

這個免焗士多啤梨芝士凍餅絕對是方便快捷,芝士糊大部份都在攪拌機製作,材料直接從雪櫃取出加入,完全不同用回溫哦!不消一分鐘己可打出幼滑的芝士漿,拌入魚膠水及已打發好的淡忌廉就是士多啤梨芝士糊了,倒入預備好的慕絲圈(或個人份量的小杯)雪實,脫模後加少少生果裝飾便大功告成了!是不是很容易呢?

No Bake Strawberry Cheesecake
士多啤梨芝士凍餅

Makes a 6-inch cake
可做六吋凍餅一個

Ingredients

For the Cheesecake Batter
130 g cream cheese
50 g milk
30 to 50 g granulated sugar
150 g fresh strawberries
120 g whipped cream
9 g (1 Tbsp) gelatin powder

One chiffon cake layer (see recipe here)
Fresh strawberry slices

材料

芝士糊
忌廉芝士 130克
牛奶 50克
細砂糖 30 – 50克
新鮮士多啤梨 150克
淡忌廉 120克
魚膠粉 9克(1湯匙)

雪芳蛋糕片一塊 (食譜請到這裡 )
新鮮切片士多啤梨 適量

Directions 做法

Chill mixing bowl and the mixer attachment in the freezer for 5 to 10 minutes before you start. Wrap the bottom of the mousse ring with plastic wrap. Line the inside with acetate strip for easy unmolding.
鋼盆及打蛋器配件預先放冰箱五至十分鐘雪凍,慕士圈底部用保鮮紙包好,內側圍上透明膠條方便脱模。

Place a cake layer on the bottom and line strawberry slices around the inside edge of the prepared ring.
圈內放入蛋糕片,再用士多啤梨片圍邊。

Bloom gelatin by mixing it into 30 g of milk and set aside for 5 minutes. Warm mixture in the microwave or sit the bowl in hot water until gelatin is dissolved. Set aside.
小碗放魚膠粉和30克牛奶拌勻,靜置五分鐘讓魚膠粉充份吸收牛奶,隔熱水坐溶或放微波爐叮溶備用。

With a blender, process cream cheese, fresh strawberries, sugar, and the remaining milk until smooth. Pour mixture into a mixing bowl. Set aside.
忌廉芝士、士多啤梨、糖和餘下的牛奶放入攪拌機打滑後倒在大碗中備用。

In the chilled mixing bowl, beat whipping cream until thickened and soft peaks form.
淡忌廉放在己雪凍的鋼盆中用電動打蛋器打至稠身及軟勾狀。

Add dissolved gelatin to the strawberry cream cheese mixture and mix well. Fold in the whipped cream in two to three batches until well combined. Pour batter into the prepared ring. Tap ring on the table counter several times to remove any large air bubbles. Smooth top with a spatula. Refrigerate until set.
士多啤梨芝士漿加入魚膠水充分拌匀,淡忌廉分兩至三次加入用膠刮或蛋拂拌匀即成芝士糊,將芝士糊倒入預備好的慕士圈內,輕敲幾下釋出大氣泡,抹平後放入雪櫃雪實。

Unmold and decorate with fresh strawberry slices and other fruits.
脫模後可放上士多啤梨片及其他生果裝飾。
