More Homemade Gummies (Yakult, Orange and Fruit Flavors) 益力多、橙汁、果味軟糖

We had a fellowship cell group gathering at my house last Saturday. My elder daughter and I made some homemade gummy candies for our little guests. We made blackcurrant, strawberry and berry gummies with jelly powder as well as gummies with orange juice and their probiotic drinks (Yakult). The ones made with jelly powder were richer in taste and I loved blackcurrant the most. The orange ones tasted kind of bland to me so I ended up remelting the gummies then flavor them with more corn syrup and orange oil. The following are my amended recipes. The sweetness and firmness of the gummies can easily be adjusted. More gelatin gives firmer gummies. After unmolding, I usually store my gummies in an airtight container in the fridge. I leave them to come slightly to room temperature before serving them, about 5 minutes. Usually these cute little gummies will be gone in two days or so. But I have purposely left some in the fridge for a week. And they tasted just as good.

週末時家中有團契細胞小組聚會,EC與女兒一起動手做了些軟糖招呼小朋友。以啫喱粉做的有黑加侖子、士多啤梨及什莓味,另外亦依網上食譜做了橙汁及益力多味。啫喱粉做的軟糖味道較濃(EC最愛黑加侖子味),橙汁軟糖相比之下味道較淡,試味後EC甚至要把它們溶掉然後重新加粟膠及橙油調味再次倒模,以下分享的配方是經過調整的,軟糖的甜度及軟硬度均可依個人喜好調節,魚膠粉越多軟糖便越硬。軟糖脫模後,EC會把它們放在食物盒中存放雪櫃,取出回溫五分鐘後便可食用。這些可愛的軟糖通常兩三天便會通通被掃光,但EC曾過做實驗,軟糖在雪櫃存放一個星期後吃仍沒有變質。

Yakult Gummies
益力多軟糖

Ingredients

120 ml Yakult or any probiotic drinks, divided (I used two bottles of Korean brand probiotic drink, 63 ml each)
2 Tbsp (18 g) powdered gelatin
2 to 4 Tbsp corn syrup
1 tsp lemon juice (used mainly to get rid of the gelatin smell, optional)

材料

益力多或其他活性乳酸菌飲品,分半 120毫升 (EC用的是韓國牌子,每支63毫升,共用了兩支)
魚膠粉 2湯匙 (18克)
粟膠 2 – 4湯匙
檸檬汁 1茶匙 (主要作用是去除魚膠粉的味道,可不加)

Directions 做法

In a small bowl, bloom gelatin by mixing it with half of the Yakult and set aside for 5 minutes. Warm mixture in the microwave or sit the bowl in hot water until gelatin is dissolved. Set aside.
小碗內放魚膠粉和一半份量益力多拌勻,靜置五分鐘後隔熱水坐溶或放微波爐叮溶備用。

Stir in the remaining Yakult and lemon juice. Add corn syrup by tablespoonful until you are satisfied with the sweetness. The mixture should taste sweeter than what you prefer as the level of sweetness will diminish significantly after chilling.
倒入餘下益力多及檸檬汁拌勻,逐少加入粟膠調味至自己喜歡的甜度(EC每次加一湯匙拌勻後試味),軟糖凝固後甜度會大大降低,所以試味時味道要偏甜。

With a spoon, skim off any foam or impurities that floats to the top. Pour mixture into moulds and refrigerate until set. Unmold and serve at room temperature or slightly chilled for best flavor.
用湯匙除掉表面的泡沫後,將混合物倒入模內,放入雪櫃雪至凝固後便可取出脫榎,待軟糖略為回溫後吃味道更好。

Orange Gummies
橙汁軟糖

Ingredients

120 ml orange juice, freshly squeezed or boxed, divided (I used Tropicana no sugar added orange juice)
2 Tbsp (18 g) powdered gelatin
3 to 5 Tbsp corn syrup (or to taste, adjust according to sweetness of the orange juice)
1/8 tsp orange oil (optional)

材料

鮮榨或盒裝橙汁,分半 120毫升 (EC用Tropicana盒裝無糖橙汁)
魚膠粉 2湯匙 (18克)
粟膠 3 – 5湯匙 (視乎橙汁甜度自行增減)
橙油 1/8茶匙 (可不加)

Directions 做法

In a small bowl, bloom gelatin by mixing it with half of the juice and set aside for 5 minutes. Warm mixture in the microwave or sit the bowl in hot water until gelatin is dissolved. Set aside.
小碗內放魚膠粉和一半份量果汁拌勻,靜置五分鐘後隔熱水坐溶或放微波爐叮溶備用。

Stir in the remaining juice and the optional orange oil (it adds shine and flavor). Add corn syrup by tablespoonful until you are satisfied with the sweetness. The mixture should taste sweeter than what you prefer as the level of sweetness will diminish significantly after chilling.
倒入餘下果汁拌勻,加入橙油(可增加光澤及味道)及逐少加入粟膠調味至自己喜歡的甜度(EC每次加一湯匙拌勻後試味),軟糖凝固後甜度會大大降低,所以試味時味道要偏甜。

Fruit Gummies
果味軟糖

Ingredients

120 ml water, divided
3 to 4 Tbsp corn syrup
1 pack jelly powder of your choice (I used Jell-O no sugar added and Robertsons)
1 Tbsp + 2 tsp (about 15 g) powdered gelatin

材料

凍滾水 120毫升 (分半)
粟膠 3 – 4湯匙
啫喱粉 1盒,自選味道 (EC用Jell-O無糖及羅拔臣啫喱粉)
魚膠粉 1湯匙加2茶匙 (15克)

Directions 做法

In a small bowl, bloom gelatin by mixing it with half of the water and set aside for 5 minutes.
小碗內放魚膠粉和一半份量水拌勻,靜置五分鐘備用。

In another bowl, mix jelly powder with the remaining water. Stir well then pop bowl in the microwave and heat until the mixture is hot. It takes one minute in my microwave. Stir until powder has dissolved.
將啫喱粉及餘下的水放在另一碗中混合均勻,用微波爐叮熱,拌勻至啫喱粉溶解,EC叮了一分鐘。

Add in the bloomed gelatin (it will be a big clump by now) and stir until gelatin is completely dissolved. Add corn syrup by tablespoonful until you are satisfied with the sweetness. The mixture should taste sweeter than what you prefer as the level of sweetness will diminish significantly after chilling.
加入浸泡好的魚膠粉(此時應為膏狀),拌至魚膠粉完全溶化後逐少加入粟膠調味至自己喜歡的甜度(EC每次加一湯匙拌勻後試味),軟糖凝固後甜度會大大降低,所以試味時味道要偏甜。

See this nasty stuff? Remove them as much as possible before pouring into mold to get crystal clear gummies.

Each recipe makes 16 to 20 gummies with the Hello Kitty silicone mold.
