My friend Erica has shared with me her Cola gummies recipe last week. I have tweaked this and turned them into sugar free gummies. Some people say that sugar free cola doesn’t taste as great as the “real” one. However, for people who are concerned about sugar intake or are diabetic, these gummies will definitely be a soothing treat.
Sugar Free Cola Gummies
130 ml sugar free cola (such as Coke Zero)
Sugar substitute (such as Equal, Splenda and Stevia) that is equivalent to 50 g or 1/4 cup of granulated sugar (please check the package to decide how much to use)
1 Tbsp agave syrup
30 g (3 Tbsp + 1 tsp) powdered gelatin
無糖可樂 (如 Coke Zero) 130 毫升
魚膠粉 30克 (3湯匙+1茶匙)
In a measuring cup or large bowl, sprinkle gelatin over the cola. Give it a quick stir then set aside for 2 minutes. Reheat in the microwave until gelatin liquefies (It takes about 30 seconds in my microwave).
Add sugar substitute (I add 6 packets of Splenda) and agave syrup and stir until thoroughly combined. If the mixture is not sweet enough, add more sweetener.
Cover measuring cup or bowl with plastic wrap. Chill in the refrigerator for 30 minutes until all bubbles and impurities have risen to the surface. With a spoon, skim off then discard the foam. Your syrup will become very clear now.
Pop the cola syrup back into the microwave and reheat until syrup becomes fluid (it takes about 20 to 30 seconds for me). Pour syrup into mould and refrigerate for a few hours until set. Unmold gummies and enjoy them chilled or at room temperature.
